One of the native delicacy that we have here in the Philippines is the kalamay. There are variety of kalamay. There are kalamay Ilocos, kalamay sa latik, ube kalamay, kalamay hati, and the kalamay buna. Among those kalamay, one of the most famous kalamay in the south is the kalamay buna. It is said that, this kalamay is the original delicacy on the town of Indang in province of Cavite.
This delicacy is pass in many generaton. Since it is known in one barrio, the municipal of Indang decided to have a place where they can cater their delicacy. As you go to the municipality of Indang, you will see their small house for bahay kalamay that serves as place for the vendors of kalamay buna. But, have you wonder on how this delicacy was made?
Some of the vendors like Aling Marites, who still make kalamay buna as part of their daily basis. She told us on how to make kalamay. First thing that she taught us is to ready all the ingredients. The ingredients are coconut milk, coconuts, brown sugar, and glutinous rice powder. First thing that you must do is mix the glutinous rice in a cup of water. Make sure that it will loo sticky. After that, put the coconut milk in the pan, make sure that it will half boiled. Then put the brown sugar and wait it to boil. After the sugar boiled, put the mix glutinous floor and stir it very well then put the coconut on it then stir again as the texture become sticky. Simple ingredients but there’s a lot of effort to do. The process itself of this delicacy is not easy to do, you have a long patience on doing it, because they say that the stickier it is, the more it become delicious.
After a long process, the end process can serve now but if you will look on it, the color of it is brown and there’s a white line causes by the coconut. The taste of it is exactly, not too sweet. It is very delightful and mouthwatering. Perfect for dessert or even a gift to someone. And aside from that, it is very affordable. So what are you waiting for?
